Alexandre Couillon is a French chef born in Dakar, Senegal in 1975, who moved to Noirmoutier, France at age six and trained at a lycée hôtelier before becoming a Compagnon de France. In 1999, he and his wife Céline took over the family restaurant La Marine in L'Herbaudière on Noirmoutier, earning a Bib Gourmand in 2002, the first Michelin star in 2007, the second in 2013, and the third in 2023. He also opened La Table d'Élise in 2008 as a more accessible bistro next door, focusing on market-driven seafood and produce.
