i. Biography
Andreas Caminada, born in 1977 in the Surselva region of Graubünden, Switzerland, completed his chef apprenticeship in 1996 and took over Schloss Schauenstein in Fürstenau in 2003, transforming it into a three Michelin-starred restaurant by 2011 with 19 Gault Millau points. He owns and operates multiple establishments including the traditional Grisons cuisine restaurant Casa Caminada opened in 2018, the vegetarian restaurant OZ, gourmet restaurant and boutique hotel Mammertsberg, acasa catering, and family restaurant IGNIV. His cuisine emphasizes regional Alpine ingredients, freshwater fish, overlooked cuts of meat, and vegetables, evolving from French influences to a sustainable, sensory-focused philosophy.
