i. Biography
Antimo Maria Merone is a Naples native and the chef-founder of Estro, his first independent restaurant in Hong Kong launched in 2021 in partnership with JIA Group, where he innovates Neapolitan cuisine using modern techniques and refined tasting menus inspired by his homeland. Previously, he served as Executive Chef at 8 ½ Otto e Mezzo BOMBANA in Macau from 2014, leading it to its first Michelin star which it retained for five years. His career began in Berlin under a Sicilian chef, followed by food studies in Parma, and roles in Hong Kong starting in 2012 at L’Altro with Philippe Leveille.
