i. Biography
Antonin Pillot is a young winemaker from Chassagne-Montrachet, Burgundy, France, who joined his family estate, Domaine Jean-Marc Pillot, in 2019 after gaining experience at Bouchard Père & Fils in Burgundy and Polley Wines in Tasmania. He has driven the domaine's transition to organic farming, achieving certification in 2024, and introduced earlier harvesting starting in 2020. In 2023, he was named a 'Rising Star' by Bourgogne Aujourd’hui magazine at age 26.
