Arnaud Lallement is a French chef born in 1974 who has led L'Assiette Champenoise in Tinqueux near Reims since 2000, following his father's death at age 26. He earned his restaurant's three Michelin stars progressively—the first in 2001, second in 2005, and third in 2014—and was named Chef of the Year by Gault & Millau in 2013. His cuisine is characterized by refined simplicity, mastery of acidity, seasonal ingredients, and deep respect for regional Champagne terroir, with his philosophy encapsulated in the motto 'Mangez vrai' (Eat true).
