Brett Lavender is the Executive Chef and co-founder of the Ark Collection Restaurants in Copenhagen, Denmark, including flagship Ark and sister restaurant Bistro Lupa, both specializing in innovative plant-based cuisine. Originally from England, he has nearly two decades of experience, having worked in luxury establishments across Australia, New Zealand, and a two Michelin-star restaurant in Tokyo before co-founding Ark in 2020, which became the first Nordic restaurant to receive a Michelin Green Star. Lavender emphasizes sustainability through full-cycle ingredient use, fermentation, and co-owning Funga Farm for local mushrooms.
