Christian Bau, born January 14, 1971, in Offenburg, Germany, completed his apprenticeship in Achern as the best apprentice of his year and gained experience at Talmühle in Sasbachwalden, Le Canard in Offenburg, and as sous-chef at Schwarzwaldstube under Harald Wohlfahrt from 1993 to 1998. In April 1998, he became head chef and host at Victor’s Fine Dining by Christian Bau (formerly Victor’s Gourmet-Restaurant Schloss Berg) in Perl-Nennig, Germany, earning the restaurant its first Michelin star that year, a second in 1999, and a third in 2005, making him Germany's youngest three-star chef at the time. His 'Bau style' fuses classic French haute cuisine with Japanese techniques and products, and he has held three Michelin stars longer than any other German chef as of 2025.
