i. Biography
Eneko Atxa is the chef-owner of the three-Michelin-starred Azurmendi restaurant in Larrabetzu, near Bilbao in the Basque Country, which he opened in 2005 and which earned its stars progressively from 2007 to 2012, making him one of Spain's youngest chefs to achieve three at age 35. Born in 1977 in Amorebieta-Zornotza, he trained at the Culinary School of Leioa starting at age 15, working in Basque kitchens like Martin Berasategui, Etxebarri, and Andra Mari before launching Azurmendi, renowned for its sustainable practices including a bioclimatic building and on-site txakoli winery. Azurmendi has been named the World's Most Sustainable Restaurant twice by The World's 50 Best Restaurants and ranked highly in global lists.
