i. Biography
Florian Favario, a chef from Haute-Savoie, France, began his career at age 14-15 with an apprenticeship at Le Clos des Sens in Annecy, later working with chefs like Michel Rostang, Marc Veyrat, and Éric Frechon, including as Executive Chef at The Lanesborough in London from around 2015. In 2018, he and his wife Sandrine took over L'Auberge de Montmin in Talloires-Montmin near Lake Annecy, transforming it into a acclaimed restaurant that earned one Michelin star initially and a second star in 2023, along with a Michelin Green Star for sustainable practices. His cuisine emphasizes seasonal local products from Savoyard terroirs with global influences, featuring dishes like roasted cauliflower meunière with hazelnut butter sabayon and lemon, or bone marrow candle with pot-au-feu and revisited onion soup.
