Gilles Goujon is a French chef born in Bourges on December 10, 1961, who opened L'Auberge du Vieux Puits in Fontjoncouse, Corbières, in 1992 with his wife Marie-Christine. The restaurant earned its first Michelin star in 1997, the second in 2001, and the third in 2010, along with his recognition as Meilleur Ouvrier de France in 1996. He emphasizes local products, seasonality, vegetables, lamb, cheeses, herbs, and Mediterranean flavors, with signature dishes like the truffle-perfumed 'rotten' egg and roasted black sea bream.
