Guillaume Galliot, born in March 1981 in Chambray-lès-Tours in France's Loire Valley, is the Executive Chef of the three-Michelin-starred Caprice at Four Seasons Hotel Hong Kong since 2017, where he led the restaurant to regain its third Michelin star in 2019. He began his career with an apprenticeship at age 15 at three-Michelin-starred Jardin des Sens in Montpellier under Jacques and Laurent Pourcel, later becoming the youngest sous chef at Raffles Hotel Singapore at age 23 and executive chef at Raffles Hotel Beijing. In 2010, he opened The Tasting Room by Galliot at City of Dreams in Macau, earning one Michelin star in its first year and two stars in 2016-2017.
