Harutaka Takahashi is the chef and proprietor of Harutaka, a three-Michelin-starred sushi restaurant located in Ginza, Tokyo. Born and raised in Hokkaido, he began his sushi apprenticeship in Sapporo before training for 12-13 years under the legendary Jiro Ono at Sukiyabashi Jiro, where he served as third chef in command. He opened Harutaka in December 2006 and has since earned recognition as one of Tokyo's premier sushi establishments, known for his authentic Edo-style sushi and heavily vinegared rice that reflects his mentor's influence.
