i. Biography
Hrishikesh Desai is the Chef Patron at Cedar Tree by Hrishikesh Desai at Farlam Hall Hotel & Restaurant in Brampton, Cumbria, where the restaurant earned one Michelin star in 2024 and three AA Rosettes. Born in Maharashtra, India, he won the Roux Scholarship in 2009 and National Chef of the Year in 2010, and previously led HRiSHi at Gilpin Hotel to a Michelin star in 2017. Trained at Institut Paul Bocuse, his cuisine fuses Indian flavors with French techniques and British produce.
