i. Biography
Jaime Pesaque is a Peruvian chef who graduated from Le Cordon Bleu and earned a Master's in Culinary Arts from the Italian Culinary Institute (ICIF), apprenticing at Michelin-starred restaurants including El Celler de Can Roca in Spain. He returned to Peru to lead the kitchen at Al Grano before founding Mayta in Lima in 2008, a contemporary Peruvian cuisine restaurant that entered Latin America’s 50 Best Restaurants in 2019, won the Highest Climber Award in 2020, and joined The World’s 50 Best Restaurants in 2022. Pesaque has expanded his portfolio with restaurants like 500 Grados, Mad Burger, Suviche, Pacifico, Yachay, Sapiens, Callao in The Hague, and NUNA in 2025.
