Born in 1980 in Nice, France, Jean-Philippe Blondet began his career at La Bastide Saint-Antoine in Grasse under Chef Jacques Chibois and at Sun Valley Resort with Chef Claude Guigon, before joining Alain Ducasse's group in 2004 at Spoon at Sanderson in London. He progressed through roles at Le Louis XV-Alain Ducasse in Monaco and Spoon in Hong Kong, returning to London as sous chef at Alain Ducasse at The Dorchester in 2013, becoming head chef in 2015, executive chef in 2016, and Chef Patron in 2023. Under his leadership, the three-Michelin-starred restaurant has retained its stars for over a decade as of 2026, blending French techniques with seasonal British ingredients.
