Jimmy Lim

Jimmy Lim is a Singaporean chef born in 1982 and the founder of JL Studio in Taichung, Taiwan, which opened in 2017 and earned three Michelin stars in 2019, 2020, and 2023, becoming the first Singaporean restaurant to achieve this distinction. Growing up helping at his family's street food stall, he trained at SHATEC in Singapore before working at Le Moût in Taichung from 2007 and international venues including French Laundry, Per Se, Noma, and Geranium. At JL Studio, he reinterprets Singaporean classics like Hainanese chicken rice, laksa, and chilli crab using Taiwanese ingredients and French techniques. JL Studio was ranked 26th on Asia’s 50 Best Restaurants in 2021 and 33rd in 2024, and received the 'One To Watch' award in 2019.
