Jon Miles-Bowring served as Executive Chef at Dinner by Heston Blumenthal in London's Mandarin Oriental Hyde Park, where he collaborated with Heston Blumenthal to execute historical British recipes reimagined with modern techniques following Ashley Palmer-Watts' departure in 2019. He led the two-Michelin-starred kitchen until May 2023, when he was succeeded by Adam Tooby-Desmond. His tenure ensured the restaurant's continued success in reinterpreting centuries-old dishes like Meat Fruit.
