Jorge Vallejo is a Mexico City-born chef and co-founder of Quintonil, opened in 2012 with his wife Alejandra Flores in the Polanco neighborhood, where he leads a modern Mexican cuisine emphasizing native ingredients, traditional techniques, and sustainability. Quintonil has achieved two Michelin stars—the first for a Mexican restaurant alongside Pujol—ranked 7th in World's 50 Best Restaurants 2024, and consistently in Latin America's top rankings.
