Julien Royer is a French chef and restaurateur born on September 1, 1982, in Cantal, Central France, to a family of fourth-generation farmers. He is the Chef-Owner of Odette, a three-Michelin-star modern French restaurant located in the National Gallery Singapore, which he opened in November 2015, and Louise in Hong Kong, opened in 2019. Royer trained under renowned chef Michel Bras at Restaurant Bras in Laguiole before relocating to Singapore in 2008, where he served as Chef de Cuisine at Brasserie Les Saveurs and later at JAAN before establishing Odette as his first solo venture.
