i. Biography
Jun Lee is the chef and owner of Soigné, a two-Michelin-starred restaurant in Seoul that he opened in 2015, blending contemporary Korean, American, and European cuisines through storytelling 'episode menus' changed every three months. A graduate of the Culinary Institute of America in 2010, he previously staged at Thomas Keller’s three-Michelin-starred Per Se and joined the founding team of Michelin-starred Lincoln under Jonathan Benno. Prior to Soigné, Lee pioneered pop-up restaurants in Seoul including Jun the Party and Jun the Pasta, earning one Michelin star for Soigné annually from 2016 or 2017 until promotion to two stars in 2023.
