i. Biography
Kai Ho is the chef and owner of Taïrroir in Taichung, Taiwan, which he founded in 2016 by fusing Taiwanese culinary traditions with French techniques after training internationally. Born and raised in Nantun, Taichung, he began with Chinese cuisine, trained in the US, China, and Singapore including at Guy Savoy and under Julien Royer at JAAN, and led Taïrroir to one Michelin star in 2018, a second in 2019, and three stars in the Michelin Guide Taiwan 2023. His cuisine deconstructs classic Taiwanese dishes using seasonal local ingredients and French methods to express a 'Locally-Global' philosophy.
