Kelvin Au Yeung, a Hong Kong native with over 30 years of experience in Chinese cuisine, serves as Director of Culinary at Jade Dragon, the three Michelin-starred Cantonese restaurant at City of Dreams in Macau. He began his career in Hong Kong kitchens, advancing to head chef at the Michelin-starred Island Tang in 2009 before joining Jade Dragon in 2012, rising through senior sous chef, chef de cuisine, and executive sous chef to his current role in 2018, the year the restaurant earned its third Michelin star. Au Yeung is known for signature dishes like rabbitfish soup with fish maw and caviar, presented at the 2018 Michelin gala, and for incorporating traditional Chinese medicine into seasonal healing soups.
