Kunihisa Goto, born in 1976 in Ōita, Japan, trained at Sakuragaoka Cookery School before moving to France in 2001 to work under chefs like Jacques Decoret in Vichy and Philippe Etchebest at Hostellerie de Plaisance in Saint-Émilion. He became chef at Hostellerie Cèdre in Beaune in 2010, earning 3 toques Gault&Millau and Michelin 'Espoir 1 étoile', then opened L’Axel in Fontainebleau in 2012 with Vanessa Blondeau, securing a Michelin star in 2013 that he has retained, along with 3 toques Gault&Millau. His cuisine reinterprets French classics with Japanese techniques and ingredients, such as the Onsen egg.
