i. Biography
Chef Tam Kwok Fung is the Executive Chef of Chef Tam's Seasons at Wynn Palace in Macau, a Cantonese restaurant that earned one Michelin star in 2024 and was promoted to two stars in 2025, as well as recognition in Asia's 50 Best Restaurants for 2024 and 2025. Previously, he served as Executive Chinese Chef at Mei Jiang Restaurant in The Peninsula Bangkok from 1999 to 2005, where it was named Best Chinese Restaurant by Metro Magazine, and at Jade Dragon in Macau, which received two Michelin stars under his leadership. In 2005, he won a Gold Medal at the fifth World Championship of Chinese Cooking. His cuisine draws from over 30 years of experience, emphasizing seasonal ingredients inspired by the 24 solar terms and blending traditional Cantonese techniques with global influences.
