Luis Valls Rozalén is the former head chef at El Poblet in Valencia, Spain, where he led the kitchen to two Michelin stars in 2019 and worked alongside Quique Dacosta for 20 years. His cuisine emphasized rich, flavorful Valencian territory-inspired dishes, reinterpreting traditions with local ingredients from areas like the Albufera. In early 2024, he departed El Poblet—leading to its rebranding as Flores Raras—and transitioned to head chef at Àtic in Palau Alameda, focusing on more accessible market-driven cuisine.
