i. Biography
Mark Birchall is a British chef and chef-patron of Moor Hall Restaurant with Rooms in Aughton, Lancashire, a three-Michelin-starred establishment that he opened in 2015. Born in Chorley, Lancashire, Birchall trained at Runshaw College and gained formative experience at Michelin-starred restaurants including The Walnut Tree under Shaun Hill and five years at Northcote under Nigel Howarth, before spending nearly a decade as sous-chef and head chef at Simon Rogan's L'Enclume. He won the prestigious Roux Scholarship in 2011, which provided a stage at El Celler de Can Roca in Spain. Under his leadership, Moor Hall earned its first Michelin star in 2017, second in 2018, and third in 2025, while also receiving a Michelin Green Star for sustainability and being voted Best Restaurant in England at the Estrella Damm National Restaurant Awards in 2024.
