Mauro Uliassi

Mauro Uliassi is the chef and owner of Ristorante Uliassi in Senigallia, Marche, Italy, a beachside restaurant he opened with his sister Catia in 1990, transforming it from a simple seafood spot into a three-Michelin-starred establishment. He earned his first Michelin star in 1994 (or 2000 per some sources), the second in 2008 (or 2009), and the third in 2018, also securing three Gambero Rosso forks. His cuisine blends global influences with east coast Italian seafood, featuring sophisticated yet simple dishes like tagliatelle of cuttlefish with nori pesto.
