i. Biography
Michelangelo Mammoliti, born in 1985 in Giaveno near Turin, Italy, trained with chefs including Gualtiero Marchesi, Stefano Baiocco, Alain Ducasse, Pierre Gagnaire, Yannick Alléno, and Marc Meneau before returning to Piedmont in 2014 as Executive Chef at La Madernassa in Guarene, where he earned two Michelin stars. Since 2022, he has led La Rei Natura at Il Boscareto Resort & Spa in Serralunga d'Alba, Piedmont, earning two Michelin stars in 2023 for his nature-inspired cuisine emphasizing aromatic herbs, local products, and childhood memory-evoking flavors.
