Nicolas Beaumann, born in 1979 in Boulogne-Billancourt, France, began his culinary career with apprenticeships at small Parisian establishments including Le Picton and A. Beauvilliers, followed by stages at Le Beauvilliers and the two-Michelin-starred Michel Rostang restaurant as an apprentice and chef de partie from 1999. He served as sous-chef under Yannick Alléno at Le Meurice from 2003 to 2008, then returned to Maison Rostang as head chef in 2008, becoming a partner with Michel Rostang, and in 2020 co-acquired the two-Michelin-starred Paris institution with Stéphane Manigold. His cuisine blends French classicism and modernity, emphasizing seasonal products, bold flavors, and precise techniques.
