i. Biography
Nicolas Gautier is the chef and co-owner with Cécilia Gautier of L'Auberge de la Grive in Trosly-Loire, Aisne, France, which opened in September 2023 and received one Michelin star in March 2024. Previously, he and Cécilia operated Restaurant Nature* and Bistrot RG in Armentières (Nord), which they sold to focus on their new venture. His cuisine draws inspiration from local producers, his own potager and verger, emphasizing regional Aisne products in an intimate 12-cover U-shaped counter setting.
