Norbert Niederkofler, born in 1961 in Lutago, Aurina Valley, South Tyrol, Italy, is a three-Michelin-star chef renowned for his 'Cook the Mountain' philosophy using only local alpine ingredients. He transformed a pizzeria into the St. Hubertus restaurant at Hotel Rosa Alpina in San Cassiano, earning one Michelin star in 2000 or 2001, a second in 2006 or 2007, and the third in 2017. After St. Hubertus closed in 2023, he opened Atelier Moessmer Norbert Niederkofler in Brunico, regaining three Michelin stars and a Green Star in November 2023. He also operates AlpiNN on Plan de Corones.
