Paco Roncero, born in Madrid in 1969, is a Spanish chef who joined the Casino de Madrid in 1991, becoming head chef of banquets in 1996 and executive chef in 2000, leading La Terraza del Casino to two Michelin stars in 2002 and 2010, respectively. In 2019, it evolved into Paco Roncero Restaurante at the NH Collection Casino de Madrid. He created the innovative Sublimotion restaurant in Ibiza in 2014, known for its immersive sensory dining experience. His achievements include the Chef L'Avenir Award in 2005 from the International Academy of Gastronomy and the National Gastronomy Award in 2006.
