Paolo Casagrande is the Head Chef at the three-Michelin-starred restaurant Lasarte in Barcelona, Spain, where he has led the kitchen since 2012 under Martín Berasategui's direction. Born in 1979 in Susegana near Conegliano, Italy, he trained at Alfredo Beltrame Hospitality School in Vittorio Veneto and worked in prestigious kitchens in Milan, London, Paris, and at Martín Berasategui's restaurant in Lasarte-Oria, Gipuzkoa, before earning his first Michelin star as head chef at M.B. in Ritz-Carlton Abama, Tenerife, in 2009. Lasarte achieved its third Michelin star in 2017 during his tenure, and since 2016, he oversees the entire gastronomic project at Monument Hotel, including Lasarte and one-starred Ristorante Oria.
