Chef Paul Lau Ping Lui is the Director of Culinary at Tin Lung Heen, a two-Michelin-starred Cantonese restaurant on the 102nd floor of The Ritz-Carlton, Hong Kong. Originally from Guangzhou, he moved to Hong Kong at age 14 and is self-taught, having learned by observing other chefs and practicing secretly at night. With over 40 years of experience, he has worked in Chinese restaurants in Peru, Madagascar, The Excelsior Hong Kong, and Spring Moon at The Peninsula Hong Kong before joining Tin Lung Heen as Chef de Cuisine in 2011.
