Paulo Airaudo, born in 1985 in Córdoba, Argentina to Italian immigrant parents, began his culinary career at 18, training at renowned kitchens including Arzak in San Sebastián, The Fat Duck in London, and Magnolia in Italy before opening La Bottega in Geneva in 2015, which earned a Michelin star in four months. In 2017, he launched Amelia in San Sebastián, named after his daughter, securing its first Michelin star after seven months and a second in 2021. He heads the Amelia Group, encompassing establishments like two-Michelin-starred Noi in Hong Kong's Four Seasons Hotel, Da Filippo, Piazzetta Milù, and Nara Nikon in San Sebastián.
