i. Biography
Romaric Chavy is an eighth-generation winemaker at Domaine Chavy-Chouet, a 15-hectare estate in the Côte de Beaune with vineyards in Meursault, Puligny-Montrachet, St. Aubin, Volnay, and Pommard. He joined the domaine in 2006 after wine school in Beaune, initially working with his father Hubert to shift from selling grapes to négociants to bottling all production, expanding output significantly. Following Hubert's death in 2014, Romaric has led the estate alone, blending tradition with innovation in producing primarily white wines from old vines.
