Shuzo Kishida is the owner-chef of Quintessence, a three-Michelin-star French restaurant in Tokyo that he opened in 2006 after training as sous-chef at L'Astrance in Paris under Pascal Barbot. Born in Aichi Prefecture in 1974, Kishida began his culinary career in 1993 at La Mer in Mie Prefecture and has maintained Quintessence's three-star status since 2008, establishing it as one of the world's most acclaimed French restaurants.
