Sylvain Joffre is the chef and owner of En Pleine Nature in Quint-Fonsegrives, near Toulouse, France, which he opened in 2011 after five years at Michel Bras in Laguiole and working with his brother Fabrice at Mas de Dardagna in Toulouse. His cuisine of territory, featuring a unique seasonal menu, earned him Gault&Millau Grand de Demain in 2013, a first Michelin star in 2014, and a second star in 2024. In 2013, he added a wood-fired bakery, followed by a wine cellar and fine grocery in 2022.
