i. Biography
Takaaki Sugita, born in 1973 in Chiba Prefecture, Japan, apprenticed for 12 years at Nihonbashi’s Miyakozushi starting after high school, then at age 30 took over a branch as Nihonbashi Tachibanacho Miyakozushi in 2003. In 2015, he relocated and rebuilt it as Nihonbashi Kakigaracho Sugita in Tokyo's Chuo-ku, earning a Michelin star in 2017. He specializes in traditional Edomae sushi, serving an omakase menu at his nine-seat counter, and is renowned for nigiri like kohada and dishes such as sardine-chive maki.
