i. Biography
Tom Meyer is a French chef from the Jura region who opened Granite in Paris in 2021, earning a Michelin star and Gault&Millau 3 toques (15.5/20) shortly after, along with the Meilleur Ouvrier de France title in 2022 and the Grand de Demain d'Île-de-France trophy in 2023. Previously, he worked as sous-chef and demi-chef de partie under Anne-Sophie Pic in Valence, at Maison Lameloise with Éric Pras in Chagny, staged at La Chèvre d'Or in Èze, and at Hôtel de Ville in Crissier, Switzerland, where he won the Prix Pierre-Taittinger in 2017. In April 2024, he was announced as successor to Arnaud Faye at La Chèvre d'Or in Èze, starting July 2024, while also linked to La Chapelle at Château Saint-Jean and La Table de Rymska through the Groupe Éclore.
