Toshiyuki Suzuki is the chef and owner of Sonoji, a tempura and soba restaurant in Nihonbashi, Tokyo, where he showcases Shizuoka’s seasonal ingredients with traditional techniques and playful twists. Born the oldest son of a soba restaurant owner, he learned noodle-making skills from an early age and trained traditionally before opening Sonoji. His cuisine features tempura fried in specialized oils followed by freshly made soba using buckwheat from Shizuoka and Tochigi.
