Yannick Franques is the Chef Exécutif at La Tour d'Argent in Paris, where he joined in late 2019, succeeding Philippe Labbé, and has reinterpreted the restaurant's iconic dishes with a contemporary touch while preserving its gastronomic heritage. A Meilleur Ouvrier de France 2004, he previously led the kitchens at Château Saint-Martin in Vence, earning two Michelin stars, and at La Réserve de Beaulieu from 2015. His career includes training under masters like Eric Frechon at Le Bristol, Christian Constant at Le Crillon, and Alain Ducasse at Le Louis XV.
