i. Biography
Yoshio Maruyama, born in 1949 in central Kyoto to a fishmonger family, apprenticed in 1967 at Kodaiji Doi under Sadae Doi and Soushaku Nishiwaki. In 1976, he helped open Roan Kikunoi Kiyamachi with Yoshihiro Murata, served as first chef de cuisine at Kodaiji Wakuden from 1983 for five years, and opened his own Gion Maruyama kaiseki restaurant in Kyoto's Gion district in January 1988, followed by Kenninji Maruyama in 1998.
